STREUSEL MUFFINS 
2 c. flour
1/4 c. sugar
1/2 tsp. salt
1 tbsp. baking powder
1 egg, beaten
1 c. milk
1/4 c. oil

TOPPING:

1/4 c. brown sugar
1 tbsp. flour
1 tsp. cinnamon
1 tbsp. melted butter

Preheat oven to 425 degrees. Mix dry ingredients in a large bowl. Combine egg, milk, and oil in another bowl. Make a well in the center of the dry mixture and add the combined liquid ingredients, all at once time. Mix only until dry ingredients are moistened. Batter should by lumpy. Combine the topping ingredients in a small bowl and put topping on each muffin before you bake them. Bake for 20-25 minutes.
