SUNDANCE EGGS 
4 flour tortillas
8 eggs
2 tsp. water
1/2 tsp. salt
1 tbsp. butter
1/2 c. chopped green onion
2 tomatoes, peeled and chopped
1 (4 oz.) can chopped green chilies
1 c. shredded Monterey Jack cheese
4 tbsp. taco sauce
4 tbsp. sour cream

Heat oven to 350 degrees. Wrap tortillas in aluminum foil. Bake for 5 minutes. While tortillas are baking. Combine eggs, water, salt in bowl. Beat well. Melt butter in a skillet. Add egg mixture. Cook on medium until eggs are almost set. Remove from heat.

Place warm tortillas on large ungreased cookie sheet. Top each tortilla with 1/4 of egg mix, 1/4 of onions, 1/4 of tomatoes, 1/4 of green chilies, and 1/4 of cheese. Bake at 350 degrees for 10 minutes. Top each with 1 tablespoon taco sauce and 1 tablespoon sour cream.
