This is good for brunch and/or late dinner. 1 dozen eggs 1 lb. Cheddar cheese, shredded 1 pkg. flour tortillas (burrito size)
Remove shorizio from casing and cook in frying pan, this should become extremely crumbly, there is a lot of grease, don't worry, once this is thoroughly cooked in a fine screen colander, dump cooked meat in and drain completely. Give grease to dog if he likes hot food.
While chorizio is cooking, scramble eggs in bowl and add a smidge of milk, put eggs and chorizio together and cook until eggs are done. Warm tortillas in oven or microwave until soft and pliable, take egg mixture and place in tortilla with a little cheese. You should have about 1 dozen of these beauties. Remaining cheese, place on top of tortillas.
Now you can either place in microwave until cheese is melted or oven at 350 degrees. I usually have sour cream and salsa on the side.
