IMPOSSIBLE VEGETABLE PIE 
2 c. chopped fresh broccoli or sliced fresh cauliflower
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. shredded cheddar cheese
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Lightly grease 10" pie plate. Bring 1 cup of water to boil, add 1/2 teaspoon salt and broccoli, cover and cook until almost tender, about 5 minutes; drain. Mix broccoli, onion, green pepper and cheese in pie plate. Beat remaining ingredients until smooth, pour into pie plate. Bake until golden brown and knife inserted halfway between center and edges comes out clean, 35 to 40 minutes. Let stand 5 minutes before serving.

One package frozen chopped broccoli or cauliflower, thawed and drain can be substituted for the fresh. Do not cook.
