ZUCCHINI CASSEROLE 
8 c. thinly sliced zucchini
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 c. shredded carrot
1/2 c. chopped celery
1 c. sour cream
1 can cream of mushroom soup
1/2 c. butter
2 (8 oz.) pkgs. Herb Stove Top Stuffing

Makes 2 - 8x8 pans.

Cook vegetables 5 minutes; drain. Combine soup and sour cream and add to vegetables.

Make stuffing. Mix stuffing with melted butter. Spread 1/4 of the dressing in bottom of greased pan and spoon in 1/2 of the vegetables. Cover with other 1/4 dressing. Repeat for other pan. Bake at 350 degrees for 35 minutes.
