CAROLYN'S POTATO CASSEROLE 
2 lbs. frozen hash brown potatoes
1 cube butter
1 med. onion, sauteed
1 med. jar pimentos, optional
1 sm. green pepper, minced, sauteed (optional)
1 can cream of mushroom soup
1 1/2 c. grated cheddar cheese
16 oz. sour cream
1 c. crushed corn flakes
Salt and pepper to taste

Mix potatoes, butter and onion (optional pimentos and green pepper) together with blended mixture of soup, cheese and sour cream. Put mixture in greased 9 x 13 baking dish and top with crushed corn flakes. Cover with foil and bake in preheated 350 degree oven for 1 hour.

NOTE: If not sufficiently browned, remove foil and bake additional 15 minutes.
