MOLDED BEET AND CABBAGE SALAD | |
Dissolve large package lemon Jello in 2 cups hot water. Add 1/2 cup cold water, 1/2 cup beet juice, 1 cup mayonnaise, little salt and pepper. Blend well with rotary beater. Pour into freezer tray and freeze until mixture is consistency of jelly. Return the mixture to a bowl and whip until fluffy. Fold in 2 cups diced beets, 2 cups shredded cabbage and 2 tablespoons chopped onion. Pour into a molded mold and freeze. |
