EGG PASTRY FOR CHEESE AND
WATERCRESS PIE
 
2 c. flour
1/4 c. butter, softened
1 egg
Dash of salt
1/3 to 1/2 c. very cold water

Combine flour, butter, egg, and salt in bowl and work with fingers until mixture resembles coarse crumbs. Add enough water, gradually, to make a soft dough. Wrap in wax paper and chill at least 2 hours.
