PICO DE GALLO 
1 lg. tomato, chopped
1 med. onion, finely chopped
1 or 2 jalapenos chopped (with seeds)
2 cloves pressed garlic
2 tbsp. of chopped cilantro (coriander)
2 or 3 drops red wine vinegar
2 or 3 drops lemon juice
Dash of salt

Mix together and chill.

BEST DRESSING:

1 tsp. each salt, paprika, celery seed and dry mustard
1/2 c. sugar
1/4 c. cider vinegar
1 c. corn oil

Serve with Romaine lettuce and toasted almonds.
