2 cups oatmeal (Old Fashioned) 1 cup all purpose flour 1 cup brown or maple sugar (or less, to taste) 1 tsp. salt 3/4 cup butter, softened 1/4 tsp. baking soda (not baking powder) 1/4 cup boiling water Combine dry ingredients and cut in butter (or shortening). Dissolve baking soda in boiling water and add to the dry ingredients while mixing with a butter knife or pastry blender; large chunks can remain. Do not over-mix or the cakes will be tough. Mold into a long wedge. Slice off and bake in a preheated 400°F oven on a buttered baking sheet until golden on edges (about 10 minutes, but this depends on size and your oven). Serve with orange or lemon marmalade. |
