AMBROSIA 
1 pkg. pistachio pudding mix
2 (12 oz.) containers Cool Whip
1 can crushed pineapples, drained
2 sm. cans mandarin oranges, drain 1 can and add juice from other
1 bag miniature marshmallows (may use 1/2 bag)
1/2 bag coconut (optional)
1 bottle maraschino cherries, drained (also optional)

Empty Cool Whip into a large bowl and add pistachio pudding mix. Blend until smooth and pale green color is even. Add pineapple and mandarin oranges along with the juice from 1 can of the mandarin oranges and blend. Then fold in the marshmallows (use at least 1/2 bag) and the coconut. Add maraschino cherries (may cut in half) and save a few to decorate on top.
