ORANGE COFFEE CAKE 
1 2/3 c. self-rising flour
1 c. brown sugar, packed
1/2 c. butter
Grated rind of 1 orange
1/2 tsp. cinnamon
3/4 c. milk
1 egg, beaten

GLAZE (Optional) :
Juice of 1 orange
1/2 c. powdered sugar
Orange slice for garnish

1. Combine self-rising flour and brown sugar. Cut in butter to make coarse crumbs. Reserve 1 cup for topping.

2. Add rind, cinnamon, milk and egg. Mix just until moistened.

3. Scoop batter into a greased and floured 8 inch tube pan or 8 inch square pan. Sprinkle top with reserved crumbs.

4. Bake at 375 degrees for 30-35 minutes or until a tester comes out clean. Cool in tube pan for 5 minutes before removing to serving dish.

5. If using glaze, combine orange juice with powdered sugar. Stir until blended. Drizzle over cake just before serving. Garnish with orange slice. Cut into 8 or 9 pieces and serve warm.

Tips: To make this cake with all-purpose flour, add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt to the all-purpose flour in step 1. Makes One 8 inch coffee cake.
