ORANGE COFFEE CAKE 
For 1 (8 inch) coffee cake you will need:

1 2/3 c. self rising flour
1 c. brown sugar, packed
1/2 c. butter
Grated rind of 1 orange
1/2 tsp. cinnamon
3/4 c. milk
1 egg, beaten

GLAZE:

Juice of 1 orange
1/2 c. powdered sugar
Orange slice for garnish

Combine self-rising flour and brown sugar. Cut in butter to make coarse crumbs. Reserve 1 cup for topping. Add rind, cinnamon, milk and egg. Mix just until moistened.

Spoon batter into a greased and floured 8-inch tube pan or 8-inch square pan. Sprinkle top with reserved crumbs. Bake at 375 degrees for 30 to 35 minutes or until a tester comes out clean. Cool in tube pan for 5 minutes before removing to serving dish.

If using glaze, combine orange juice with powdered sugar. Stir until blended. Drizzle over cake just before serving. Garnish with orange slice. Cut into 8 or 9 pieces and serve warm.

Tips: To make this cake with all-purpose flour, add 1/2 teaspoon baking powder and 1/2 teaspoon salt to the all-purpose flour.

The fragrance of fresh orange rind and cinnamon will whet appetites for this easy coffee cake. Serve it with scrambled eggs and bacon for a special breakfast or just with coffee anytime.

Preparation time: 15 minutes. Oven temperature: 375 degrees. Baking time: 30 to 35 minutes.
