BAKED BLUEFISH | |
1 whole bluefish (6 lb.) Salt Pepper Melted butter FISH STUFFING: 1 c. stale bread crumbs 1 tbsp. melted butter Salt and pepper Onion, diced finely Chopped parsley 1/4 c. hot water Clean the fish. Stuff and sew up. Place in dripping pan lifting from pan if possible, foiled lined. Sprinkle with salt and pepper. Brush with melted butter and dredge with flour. Cut gashes in fish and lay in strips of thin bacon or salt pork as preferred. Bake at 375 degrees basting with melted butter in one cup hot water. FISH STUFFING: Mix ingredients of stuffing together, stuff fish. Bake about 1 1/2 hours or until fish flakes easily when tested with fork. |
