FISH AMANDINE 
1/3 c. all-purpose flour
1/4 tsp. salt
1/9 tsp. pepper
4 (6 to 8 oz.) trout fillets
2/3 c. milk
1/4 c. butter, melted
1/4 c. slivered almonds

Combine flour, salt and pepper; set aside. Dip fillets in milk and coat with flour mixture. Saute' fish in butter 2 to 3 minutes on each side or until fish flakes when tested with fork. Transfer fish to a warm platter. Saute' almonds in pan drippings until browned; sprinkle over fish. Yield 4 servings.
