BREAKFAST SAUSAGE AND APPLE CAKE 
2 eggs
2/3 c. brown sugar
1 c. oil
1 c. buttermilk
2 c. flour
2 c. quick cooking oats
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
14 oz. spiced apple rings, reserve syrup
2 (8 oz.) pkg. brown-and-serve sausages, browned

SYRUP:

1 c. sugar
1/4 c. cornstarch
1 c. liquid (reserved syrup plus enough water)

Preheat oven to 400 degrees. Generously grease 12-cup bundt pan with 1 tablespoon shortening.

In a large bowl, blend the first 4 ingredients. Stir in flour, oats, baking powder, salt, and soda just until blended. Pour 1/2 cup batter into greased pan. Layer apple rings and then sausages over batter. Pour remaining batter over sausages.

Bake 40-50 minutes until toothpick comes out clean. Cool upright in pan 5 minutes; invert onto serving plate.

As cake is baking, in a small saucepan, combine sugar and cornstarch; stir in syrup/water mixture. Cook and stir over low heat until thickened and clear. Serve hot over hot slices of cake. Serves 12.
