ANGEL FOOD CAKE 
1 1/4 c. sifted flour
1 3/4 c. sugar
1/2 tsp. salt
1 1/2 c. egg whites
1 1/4 tsp. cream of tartar
1 tsp. vanilla and 1/2 tsp. almond flavor or 1/2 tsp. lemon

Mix flour, sugar and salt; sift 5 times. Beat egg whites until foamy. Add cream of tartar - continue beating until they stay put in the bowl when bowl is tilted. Fold in dry ingredients, about 3 tablespoons at a time. Pour into tube angel food cake pan. Bake 1 1/4 hours at 325 degrees.
