LIME SHERBET SURPRISE 
1 (3 oz.) pkg. lime flavored gelatin
1/2 c. sugar
1 1/2 c. boiling water
1 c. buttermilk
1 tsp. grated lemon peel
3 tbsp. lemon juice
1 egg white

In mixing bowl, combine gelatin and sugar; dissolve in boiling water. Stir in milk, lemon peel and lemon juice. Turn into 4 cup pan; freeze until firm. Break into chunks; beat with electric mixer until smooth. Beat egg white until stiff peaks form. Fold into gelatin mixture. Spoon back into pan, freeze until firm. Makes 10 (1/2 cup) servings.
