SWEET POTATO CASSEROLE | |
3 c. mashed, cooked sweet potatoes 1/2 c. melted butter 1 tsp. vanilla 1 c. sugar 2 eggs, well beaten 1/3 c. milk Combine sweet potatoes, sugar, butter, eggs, vanilla and milk. Mix well. Spoon into a 2 quart casserole; cover with topping. Bake at 350 degrees for 25 minutes. TOPPING: 1/2 c. firmly packed brown sugar 2 1/2 tbsp. butter 1/4 c. all purpose flour 1/2 c. chopped pecans Combine all ingredients, mixing well. Sprinkle on top of potato mixture before baking, then enjoy. |
