MICROWAVE MEAT LOAF 
2 lbs. lean ground beef
2 eggs, room temperature
8 oz. tomato sauce
2 tbsp. instant minced onion
2/3 c. oatmeal, bread, or cracker crumbs
Dash of Tabasco, Italian herb seasoning, or Worcestershire sauce (your choice)

Mix all ingredients together and place in microwave safe tube pan. (If non available, use glass pie plate with small drinking glass, open side up, in middle of plate). Cook, uncovered, 14 minutes on full power. Half way through, drain juices and rotate. Carry over cooking time, 7 to 10 minutes, covered. While meat loaf is carry-over cooking, baked potatoes can be microwaved and a salad made.

Since microwave ovens vary in power, you may need to adjust your cooking time.
