CHILI SKILLET | |
1 lb. ground beef 1 c. chopped onion 1/2 c. chopped green pepper 1 tsp. garlic powder 1 c. tomato juice 1 (8 oz.) can kidney beans 4 tsp. chili powder 1 tsp. oregano 1 tsp. salt 1/2 c. uncooked long grain rice 1 c. corn 1/2 c. sliced black olives 1 c. shredded Cheddar cheese In a large skillet, over medium heat, cook beef, onion, and peppers. Drain. Add tomato juice, kidney beans, chili powder, oregano, salt and rice. Simmer 25 minutes or until rice is tender. Stir in corn and olives, cook 5 minutes. Sprinkle on cheese. Cook until cheese melts. |
