CHINESE CHICKEN SALAD 
2 chicken breasts, sliced (leftover fried chicken is best)
1 head lettuce, shredded
1/2 pkg. rice sticks, deep fried and drained
3 to 6 green onions, chopped
1/2 c. almonds, deep fried for approximately 1 minute.

DRESSING:

4 tbsp. sugar
2 tsp. salt
1/2 tsp. black pepper
4 tbsp. raspberry vinegar
1/2 c. peanut oil

In small saucepan, combine sugar, salt and vinegar. Over low heat, stir until sugar dissolves. Remove from heat and cool, add to oil and pepper.

In large bowl, place lettuce, green onion, rice sticks, chicken and nuts. Just before serving, pour on dressing and toss. This will become one of your favorites! 4-6 servings.
