ZUCCHINI BROWNIES 
1 1/2 c. sugar
1/2 c. oil
2 tbsp. vanilla
2 c. zucchini
1 c. chopped nuts
2 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
3-4 tbsp. cocoa

Grate zucchini in blender or food grinder. Combine sugar, oil and vanilla. Add to zucchini. Combine dry ingredients and add to zucchini mixture; beat. Add nuts. Bake in an 8"x8" cake pan that has been greased and floured, for 30 to 40 minutes. Test with toothpick.
