IMPOSSIBLE PIE 
1/4 c. butter
4 eggs
2 c. milk
3/4 c. sugar
1/2 c. buttermilk biscuit mix
2 tsp. vanilla
1/2 tsp. salt
1 c. toasted coconut

Microwave butter on LOW (30%) for 45 seconds to 1 minute or until softened. Combine softened butter, eggs, milk, sugar, biscuit mix, vanilla and salt in blender container. Mix in blender until well blended. Stir in coconut.

Pour into a lightly greased pie dish. Microwave on MEDIUM (50%) for 22-24 minutes or until knife inserted near center comes out clean. Turn dish several times during cooking.

Since microwave ovens vary in power, you may need to adjust your cooking time.
