COFFEE GRANITA 
1 c. sugar
1 c. water
2 1/4 c. very strong black coffee

Combine sugar and water in a saucepan. Bring to boil and continue boiling 5 minutes. Cool, add coffee, place in refrigerator tray and freeze until mushy. Stir and freeze again 3 to 4 hours, beating once or twice. Serves 4.

To make a deluxe coffee granita, add 1 to 2 tablespoons of Kahlua and top each serving with whipped cream.

Fresh fruits and berries are particularly appealing for granitas and sorbets although frozen berries can be substituted. However, now that fresh strawberries are available, use them for the ultimate sorbet.
