CHICKEN PARMESAN 
4 1/2 chicken breast, skinned and boned
2 cans Italian style stewed tomatoes
2 tbsp. cornstarch
1/2 tsp. oregano or basil
1/4 tsp. hot pepper sauce
1/4 c. Parmesan cheese

Place chicken in baking dish. Bake covered 15 minutes in preheated oven 425 degrees. Drain. Combine tomatoes, cornstarch, oregano, pepper sauce and cook in sauce stirring constantly until sauce is thickened. Pour heated sauce over chicken, top with cheese and bake another 5 minutes uncovered. 4 servings.
