ARISTOCRAT PICKLES | |
1 gallon pickles, sliced 1 c. salt Pulverized alum Ginger SYRUP: 3 lbs. sugar 1 qt. vinegar 1 pt. cold water 1 tsp. celery seed 1 tsp. cloves 1 tsp. allspice 1 cinnamon stick Slice 1 gallon dill size pickles thin. Make brine of 1 gallon cold water and 1 cup salt. Let stand 7 days, stirring every day. On 7th day, drain and cover with cold water, adding heaping tablespoon pulverized alum. Simmer 10 minutes. Drain and cover with cold water, adding 1 tablespoon ginger. Simmer 10 minutes. Drain. Cover with hot syrup. Let simmer 1/2 hour. Seal. |
