FRESH APPLE CAKE 
1 1/4 c. corn oil
2 c. sugar
3 eggs
1 tsp. baking soda
1 tsp. salt
3 c. flour
1 c. chopped nuts
2 tsp. vanilla
3 c. chopped apples

Beat together the sugar and oil. Sift dry ingredients and add to first mixture alternately with eggs, beating after each addition. Add vanilla and fold in nuts and apples.

Pour into greased and floured tube pan. Bake at 350 degrees for about 1 1/2 hours.

TOPPING GLAZE:

Combine 1 cup brown sugar, 1/2 cup butter (1 stick), 1/4 cup evaporated milk, and 1 teaspoon vanilla. Cook over low heat to a full boil. Remove from heat, cool. Beat and glaze cake. Cake should be cold or glaze won't stick.
