TURKEY & RICE CASSEROLE 
1 lg. or 2 med. onions, chopped
1/4 lb. butter
6 sliced mushrooms
2 c. turkey pieces
1-1 1/2 c. leftover stuffing
Sm. amount chopped parsley
Pinch thyme, salt & pepper
1 tbsp. curry
1 c. rice
2 c. turkey or chicken broth

Saute onion in butter. Add mushrooms, continue to saute 3-4 minutes. In a casserole combine turkey, stuffing, parsley and spices. Add rice to casserole with rest of ingredients. Cover with liquid. Place in preheated 375 degree oven. Cook until rice is tender and liquid all absorbed.
