CORNED BEEF 
5-6 lb. lean corn beef
Cold water to cover in deep pot
3/4 tsp. whole pickling spice
1/4 tsp. liquid smoke
1 tbsp. cider vinegar
1/2 c. diced raw carrots
1/2 diced onion
1/4 c. celery

Place corned beef in large deep pot and cover with all the above ingredients. Simmer for 4 hours over medium low heat. Remove meat from liquid, trim fat and place in large baking dish. Discard liquid. Cover with the following glaze and bake in preheated oven, 375 degrees for about 20 minutes.

GLAZE:

1/3 c. brown sugar
1/3 c. prepared mustard
1/4 tsp. ground cloves

Beat this together and brush on meat.
