PUFFY APPLE PANCAKE 
2 tbsp. butter
3 eggs
3/4 c. milk
3/4 c. flour
1 c. sliced apples
Cinnamon to taste
Sugar to taste
Nutmeg to taste

Melt butter in ovenproof skillet. Beat together eggs, milk and flour. Pour into skillet. Bake in skillet uncovered at 400 degrees for 10 minutes (pierce large bubbles). Reduce heat to 350 degrees and bake for 15 minutes or until light brown.

Saute apples, cinnamon and sugar until tender (while pancake is baking). Slide pancake onto oval platter, fold in half and pour apple mixture over all.
