EXCELLENT BREAD | |
2 pkg. active dry yeast 1 c. warm water 3 1/2 c. lukewarm water 14-14 1/2 c. flour (may use some wheat or whole grain) 6 tbsp. sugar 2 tbsp. salt 1/4 c. soft shortening Dissolve 2 packages in 1 cup warm water. Add 1/2 flour and other ingredients. Mix well and set aside for 1 1/2 hours. Add remaining flour and knead about 5 minutes. Only practice can tell you the exact amount of texture. Cover bottom of bowl with a little oil and place bread back in bowl, cover and let rise again for 1 1/2 hours. Knead again and divide and shape into loaves; let rise (in bread pans) another hour or 1 1/2 hours. Bake at 400 degrees for 30-40 minutes. (Grease bread pans.) The flour you use is very important. Use a good grade. |
