Powdered sugar
Peanut butter

Peel and boil potato. When soft, drain and mash. Add powdered sugar while still mashing. Will turn to liquid. Continuing adding powdered sugar until mixture makes a ball. Roll thin on a lightly powdered board (use powdered sugar on board).

Spread with peanut butter. Roll like a jelly roll and wrap in waxed paper and freeze. Slice when ready to serve. Makes at least two small rolls.
