CHICKEN MOZZARELLA 
4-6 boneless chicken breasts, cut into strips
1 egg, beaten
2/3 c. bread crumbs
2/3 c. Parmesan cheese
Olive oil
8 oz. Mozzarella cheese

Mix bread crumbs and Parmesan cheese together. Dip chicken strips in egg, dredge in crumb mixture. Place 2 tablespoons olive oil in a pan. Saute chicken strips, a few at a time, until golden brown, about 3 minutes per side. Place in a 9 x 13 inch baking dish. Sprinkle with Mozzarella cheese. Bake at 350 degrees for 20 minutes. Serves 4-6.
