Drain 1 pound can of diced beets - measure liquid. Dissolve 1 package lemon gelatin in 1 cup boiling water.

Add: 3 tbsp. vinegar 3/4 c. beet juice

Chill until slightly thickened. Stir in beets: 1 1/2 tsp. grated horseradish

Serve with sour cream salad dressing to which 1 teaspoon horseradish has been added.
