APPLE TURNOVERS | |
About 5 lbs. apples, peeled, cored and diced (Granny Smith) 2 tbsp. cinnamon Sugar to taste 3/4 c. raisins Cook the above in a pot until just medium soft. When done, drain liquid into separate pot and put on heat. Add 1 heaping tablespoon cornstarch to 1/4 cup water. Mix. Add cornstarch to liquid from apples and cook until it comes to a boil. Add to apples. Cool apple mixture. FILO: Melt 1 stick butter. Cut filo pastry in half and constantly keep moist under damp towel. WORK QUICKLY, placing 2 heaping tablespoons on top section of a buttered piece of filo. Roll. Place on jelly roll pan (to catch the butter and ooze). Butter each top as you finish. Bake at 400 degrees for 10 minutes and at 350 degrees for about 15 minutes or until VERY crisp and lightly browned. (It might take longer; keep it in the oven. Remember you also are baking the inside, so bake this with that thought in mind.) Serves 8. |
