CANADIAN CHEESE SOUP 
1/3 c. grated carrots
1/3 c. chopped onions
1/3 c. finely diced celery
1 c. chicken broth
2 c. med. thick white sauce
4 oz. Old English cheese, grated
Salt and fresh ground pepper, to taste

Parboil vegetables in broth until tender. Combine with white sauce, salt, pepper and the grated cheese. Heat and serve. DO NOT BOIL! cheese will curdle. Serves 4.
