BANANA OATMEAL BREAD | |
1/3 c. uncooked oats (regular or quick-cooking) 1/4 c. buttermilk 1/2 c. shortening 1/2 c. sugar 2 eggs 3 ripe bananas, mashed 2 c. all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt Combine oats and buttermilk; set aside. Cream shortening and sugar until light and fluffy; add eggs, one at a time, beating well after each addition. Stir in bananas and oat mixture. Combine flour, baking powder, soda, and salt; stir into banana mixture. Spoon batter into a greased loaf pan. Bake at 350 degrees for 1 hour and 10 minutes, or until done. |
