PINEAPPLE - CARROT SALAD 
1 c. boiling water
1 pkg. (3 oz.) lemon-flavored gelatin
1/2 c. cold water
1 can (8 1/4 oz.) crushed pineapple
1/8 tsp. salt
1/2 c. shredded carrots
Salad greens

Pour boiling water on gelatin in bowl; stir until gelatin is dissolved. Stir in cold water, pineapple (with syrup) and salt. Refrigerate until slightly thickened but not set. Stir in carrots. Pour into 4-cup ring mold or 6 individual molds. Refrigerate until firm. Unmold on salad greens. 6 servings.
