MEXICAN SPICED BEEF 
4 1/2 lbs. bone in beef chuck roast
7 oz. can diced green chilies
3 tbsp. chili powder
1 tsp. oregano leaves
2 cloves garlic, pressed
8 oz. can stewed tomatoes
Salt
Cayenne pepper
Flour tortillas
Sour cream
Guacamole

Place meat on heavy foil. Mix green chilies, chili powder, oregano and garlic. Spread on top of roast. Seal foil around roast. Bake at 300 degrees for 4 to 4 1/2 hours, or until meat falls apart. Discard fat and bone. Put meat and drippings in large saucepan. Add tomatoes, salt and cayenne. Stir and heat.

Spoon about 4 tablespoons on warm tortilla, top with guacamole and sour cream. Wrap and eat.
