CRABMEAT AU GRATIN | |
1 onion, chopped fine 1 whole stalk celery, chopped fine 2 egg yolks 1 tsp. salt 1/2 lb. grated Cheddar cheese 1 lb. crabmeat 1 stick butter 1/2 c. flour 1 large can evaporated milk 1/2 tsp. red pepper (optional) 1/2 tsp. black pepper Sauté vegetables in butter until tender. Add flour, milk, egg yolks, pepper, crabmeat and half of the cheese. Pour into greased baking dish. Sprinkle with remaining cheese. Bake at 375°F about 15 minutes or until hot and bubbling. |
