BEEF BRASCIOLE 
Have butcher slice 3-4 pound rump roast or round roast into very thin slices (less than 1/4 inch thick).

On slices, spread thinly the following mixture. It will be a paste: 3 eggs, beaten well Salt, pepper, oregano

On bread crumb mixture, put: 1 thin slice Mozzarella cheese 1 thin sliced hard boiled eggs

Roll up the slice of beef with the fillings. Secure with toothpicks. Place in roasting pan with 1 cup Italian spaghetti sauce and 1/2 cup water. Cover and bake 1 hour at 350 degrees. Delicious served with spaghetti and the sauce and drippings from pan.
