EGGPLANT CASSEROLE 
3 eggplant, cut in half unpeeled
1 1/2 lbs. ground beef
3 slices bread, crumbled
6 crushed crackers
1 chopped onion
1 egg
Salt and pepper

Boil until tender after tender. Place on platter and water drains out. Cool. Hull out eggplant and mash mixture. Brown meat. Place meat mixture with eggplant mixture. Add to above mixture, bread, crackers, onions, egg, salt and pepper. Mix and place in eggplant mixture. Mix well. Put in casserole dish. Top with slices of bacon. Bake in 350 degree oven until brown.
