ZUCCHINI MARMALADE 
6 c. peeled & grated zucchini
6 c. sugar
2 tbsp. lemon juice
1 (20 oz.) can crushed pineapple
2 (3 oz.) pkg. Jello (apricot or any flavor you want)

Add 1 cup water to sugar and zucchini. Bring to boil and boil 6 minutes. Add lemon juice and pineapple with juice and boil 6 minutes more. Add Jello and cook 6 minutes. Put in sterilized jars and seal.

We used orange jello and lemon juice in the recipe--you may not need quite as much sugar.
