PUMPKIN SAUCE 
Grate green pumpkin (peeled) into strips. Add Salt and 1 tablespoon vinegar. Mix well. Let stand 1/2 hour. Squeeze out excess liquid. In pan, brown small onion (chopped) in just a little lard. Stir in paprika (to amount of your taste). Add squeezed out pumpkin. Simmer slowly, covered (about 1/2 hour). Stir frequently so it doesn't stick. Then add about 1 tablespoon flour, 1/2 pint sour cream, some water (about 1/4 pint). Keep stirring until well mixed. Bring to slow boil. (Stirring is important so it doesn't stick to pan.) Ready to serve as hot vegetable.
