BRAN MUFFINS (6 WEEK) | |
1 (16 oz.) box bran flakes (or Raisin Bran cereal) 1 c. oil 3 c. sugar (or less if desired) 4 eggs, beaten 1 qt. buttermilk 5 c. flour 5 tsp. baking soda 2 tsp. salt In a very large mixing bowl combine the cereal, sugar, flour, baking soda and salt. In a separate bowl mix the eggs, oil and buttermilk. Then add the liquid ingredients to the dry ingredients and mix together. Bake in a greased muffin tin 15 minutes at 400 degrees. This makes a very large batch - store the batter in a tight container up to 6 weeks. Makes approximately 4 dozen. |
