FRUITED RICE SALAD 
1 (8 oz.) can pineapple chunks
1/2 to 1 c. diced chicken
1/2 c. sliced celery
Salt
Mayonnaise
1/2 c. grapes or chopped apple
1/4 c. chopped nuts
Dash of pepper
2 c. cooked rice, cooled

Drain pineapple, reserving 3 tablespoons juice. Combine all ingredients except mayonnaise. Mix well. Chill. Just before serving, mix with enough mayonnaise and pineapple juice to make a moist salad.
