GREEN TOMATO MINCEMEAT 
Grind fine 8 quarts of tomatoes. Drain. Boil for 30 minutes. Drain again. Cover with hot water, scald and drain well.

ADD:

4 lb. brown sugar
2 lb. raisins, seedless
2 tbsp. salt
1 tbsp. cinnamon
1/2 tbsp. cloves
1/2 tbsp. nutmeg
1 c. suet, chopped
1 c. vinegar

Cook and stir until the mixture is the color of raisins. Stir often. When ready,

ADD:

1/2 lb. citron, can substitute 2 - 3 lb. ground oranges, peel and all
3 qt. apples, chopped

Heat and cook until the apples are cooked. Seal in canning jars following instructions for processing, or freeze in pint containers. Use as you would any mincemeat. For pie, I use an equal amount of each of mincemeat and additional apples with about 1/2 cup more sugar.
