MARINATED ROQUEFORT AND ONION 
1/2 lb. Roquefort cheese
1 med. red onions, sliced
1/3 c. olive oil
1 tbsp. red wine vinegar
2 cloves garlic, crushed
1/2 tsp. dry mustard
1 tbsp. lemon juice
1/4 tsp. pepper
1/2 tsp. salt
1/3 c. finely chopped parsley

Crumble cheese into 9 inch pie plate. Top with onion slices. Combine oil and with all remaining ingredients except parsley. Blend well and pour over cheese and onions. Sprinkle with parsley. Cover with Saran and marinate at least 3 hours. Serve on triangles of dark pumpernickel (dense) bread or folded pita triangles. Makes about 44 sandwiches.
