HONEY - APRICOT LOAF | |
1/2 c. dried apricots, cut up 1 c. water 3/4 c. honey 1/2 c. mayonnaise 1/4 c. chopped walnuts 1 tsp. lemon rind 2 c. sifted all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 1/4 tsp. cinnamon 1/4 tsp. nutmeg Simmer apricots in water for 10 minutes. Drain, reserving liquid. Pour honey into mayonnaise in a fine stream, beating continuously. Beat until fluffy. Stir in apricots, walnuts and lemon rind. Sift dry ingredients together. Sift over creamed mixture, mixing well. Add apricot liquid; stir until well blended. Pour into 9 x 5 x 4 inch loaf pan with bottom lined with a double thickness of waxed paper. Bake in a 325 degree oven for 1 hour or until loaf tests done. Allow to cool. Frost with orange icing. Loaf will stay fresh and moist when foil-wrapped and stored in a cool place. |
